There are many different types of flat bread. This particular recipe is fat and salt free.
Ingredients
flour
baking powder
hot water
Procedure
Take 1 tablespoon of baking powder per 2 cups flour, mix dry ingredients completely.
Add hot water slowly until a thick, sticky ball is formed.
Stir by hand with a sturdy wooden spoon or even your fingers.
Hand knead dough, being careful not to over knead. Knead only briefly.
Unlike a yeasted bread, you're not trying to build gluten, just blend the dough to a smooth consistency.
Use dry flour on hands, counter, and rolling pin to keep it from sticking.
Form dough balls a little larger than a golf ball.
Roll dough into a circle about 1/8 inch thick.
Cook immediately over medium heat or slightly less, flipping once after bubbles rise in dough.
Tips
A round cast iron griddle works best
Cover cooked fried bread with a towel until it's ready to eat.
Enjoy as you would tortillas, or deep fry with butter, sprinkle on some cinnamon and sugar and enjoy as dessert.
